How to do it
Open Settings and tap your name at the top. The row may be labeled Apple Account.
Tap iCloud > Hide My Email.
Create a new address and use it on the site that asked. Mail forwards to your inbox.
To stop a site later, come back to the same list and deactivate or delete that address.
Making addresses here needs iCloud+, which comes with any paid iCloud storage plan. Sign in with Apple can hide your email for free when an app offers it. Mail still lands in your real inbox, so do not use this for anything you would not want there.
