Turn on Type to Siri in Settings > Siri (search Settings for it if you can't find it). Pressing the side button then opens a text field instead of listening.

How to do it
Open Settings and tap Siri. If you do not see Siri, search Settings for Type to Siri.
Turn Type to Siri on.
Press the side button. A text field should appear instead of the phone listening.
Type the request and send it. If the phone still only listens, the switch did not stick. Open the setting and check it again.
Typing is better for names and addresses, which speech recognition still mangles. Speaking is still better when your hands are full.
